Spray an 9x11 casserole dish with cooking spray or coat with butter or coconut oil. Heat olive oil in a large non-stick sauté pan, add onion along with pinch of salt. Sauté' until onions are translucent. Add in peppers and garlic and cook for another two minutes. Add in chopped spinach with a bit more salt and pepper, stir and cook until spinach has wilted down. Shut off heat and let veggies cool a bit. In a large bowl, whisk together the eggs and then slowly stir the cooled veggie mixture into the eggs. Pour the egg and vegetable mixture into baking dish and bake for about 30 minutes, or until the center is set and the outer edges are slightly browned. Allow the eggs to cool, then slice into six pieces. Build the sandwiches by adding one piece of the baked eggs and one slice of cheese to each English muffin. Wrap each sandwich in plastic wrap and place into the freezer for up to 3 months. **To reheat, you have a couple of options. Remove from freezer the night before and leave in fridge overnight to defrost. Then when ready to eat place on microwave safe plate and heat for a minute or so or until heated through. The other option is to remove from freezer an leave on counter for 20-30 minutes before removing plastic wrap and heating in microwave until warmed through. Heat an 8-inch non stick skillet over a medium low heat. Melt the oil or butter in the pan and swirl it around to coat the bottom of the pan. Add eggs to the pan and season with salt and pepper. Gently move the egs around the pan as they begin to set up. I like to pull the edges of the eggs towards the center of the pan, allowing the loose eggs to spill over. Continue until your eggs have set up and you have a thin layer of loose egg on the top of the omelet. Add cheese to one half of the omelette and fold the omelette onto itself to create a half moon. Slide out of the pan and enjoy. *Never use a non stick cooking spray in your non-stick skillets. They will ruin your pans. Instead stick to a pat of butter or oil. MUSHROOM + GOAT CHEESE COMBO 4 ounces of wild mushrooms 1 tablespoon goat cheese 1 tablespoon olive oil Heat olive oil in a small saute pan and add mushrooms. Saute for 5 minutes or so until lightly browned and tender. Seaosn with salt and pepper. Add mushrooms to omelette and dot in the goat cheese. Fold egg over onto itself, pop on lid for 30 seconds and then serve. Enjoy! Calories: 363; Total Fat: 25.6g; Saturated Fat: 11.4g; Cholesterol: 402mg; Sodium 252mg, Carbohydrate: 10.1g; Dietary Fiber: 4g; Sugars: 2.1g; Protein: 22.1g WESTERN OMELETTE COMBO 2 tablespoon red bell pepper, chopped 2 tablespoon green bell pepper, chopped 2 tablespoons onion, chopped 1 ounce ham, chopped 1 tablespoon shredded cheddar cheese Saute onion pepper and ham in a small non stick pan until slightly tender. Add veggies onto one half of you omelette and sprinkle cheese over the top. Fold omelette over onto itself and enjoy! Calories: 338; Total Fat: 23.2g; Saturated Fat: 11g; Cholesterol: 425mg; Sodium 522mg, Carbohydrate: 5.8g; Dietary Fiber: 0.8g; Sugars: 3.5g; Protein: 24.4g SANTORINI OMELETTE COMBO small handful of spinach, chopped 3 tablespoons chopped tomatoes 1 tablespoon crumbled feat cheese Layer ingredients onto one half of the omelette. How I shop for food & meal prep to stay HEALTHY & FIT (+ easy juice recipes)

Hi everyone! These are some basic tips I try to implement when shopping for food to maintain a healthy diet and practice good snacking habits. Let me know if you like this video by giving it a thumbs up! If you have any questions, feel free to ask. I hope this is helpful for everyone who has been asking fitness and dietary questions! XO Find me on Instagram @itsblitzzz TIPS TO USE WHEN GROCERY SHOPPING: 1. Clean out your refrigerator weekly and evaluate the food you have to prevent food waste (and save $$$$$!) - When disposing of food and food waste, check plastic packaging to see what's recyclable (a lot of it is! Clean off any food before recycling) 2. MAKE A LIST before shopping and plan easy recipes that you want to make for meals throughout the week !! This helps me so much and helps me stick to what I ACTUALLY need. Some easy meal ideas I make on a regular basis are avocado toast, healthy waffles, overnight oats, healthy tacos, steamed vegetables and rice, etc etc. I like to organize my grocery lists by sections in my grocery store so I can shop fast. 3. Shop SMALLER / Plan small grocery trips instead of buying everything at once. Again, this eliminates a ton of food waste. Try to plan meals for 4-5 days and make quick trips to the store when food is needed. This doesn't have to take up a ton of your time or be inconvenient. Buying food for two weeks at once always = lots of spoiled fresh foods (especially when the bulk of your food is fresh!) 4. USE LESS PLASTIC. Single use plastic that is thrown away goes into landfills forever! Try to shop without plastic bags for produce, and if you must use them, reuse them and then recycle! 5. Shop LOCAL and at farmers' markets when possible. I find that farmers markets are actually the most affordable source for fresh produce and it's usually the best quality. Plus you are supporting the farmers directly! If you can't shop there, find a good natural food store that stocks local, affordable produce ( I LOVE Lassens in Los Angeles for produce!) 6. Wash your fruits and vegetables when you get home from shopping and prep veggies so they are ready to grab and go! You're more likely to reach for healthy snack choices when they are convenient and ready to eat. 7. Don't deprive yourself of all "bad foods" and condiments. It's ok to enjoy snack foods that you like even if they aren't the MOST healthy, just try to do so in moderation and aim for junk that isn't extra processed. I love ranch & blue cheese dressing annnnnnd chocolate chip cookies and I see them in my future for a very long time. 8. Invest in a decent juicer & prep your own fresh juices. Save an a$$load of money by juicing yourself in batches and storing them in your fridge. I like to use recycled glass bottles or mason jars to store them. My juicer was super affordable and I've had it for about 6 years! (find it here: http://amzn.to/2n9eJ04) RECIPES Ginger turmeric water with lemon and cayenne (1 serving) Ingredients 1 inch piece of ginger 1 quarters inch piece turmeric 1/2 lemon Dash of cayenne purified water Juice lemon, turmeric, and ginger via juicer. Add dash of cayenne. Stir to combine (I like to add a tad of water and then stir). Pour into mason jar or glass container. Add purified water to top. Cap and store in refrigerator. Shake before drinking. Kale coconut water (1 serving) Ingredients half bunch kale 1 apple unsweetened coconut water Juice kale and apple in juicer. Pour into mason jar or glass container. Add coconut water to top. Cap and store in refrigerator. Shake before drinking. The BEST blue cheese dressing EVER in life (not vegan) Ingredients 3 ounces blue cheese 2 tablespoons vegenaise (vegan mayonaise) 3 tablespoons buttermilk 3 tablespoons sour cream dash garlic powder dash sea salt dash black pepper 1/4 teaspoon turbinado sugar 3/4 teaspoon white wine vinegar Add blue cheese to a bowl and press with a fork to break up. Add the rest of ingredients and mix with a spoon until combined. Store in refrigerator for up to a week. Enjoy with fresh veggies/on everything.
